Busy new bakery for expectant mum

VI NGUYEN is busy after opening the new Prince Street Bakery and take away shop with her husband on Monday.

If having to organise the opening of a new store on schedule wasn't stressful enough, Vi is also due to give birth in five weeks.

Vi and her husband are expecting a baby boy who they will name Kingston.

Vi moved from Perth five months ago to start her business in Grafton. She is enjoying the change and her time here, and she hopes to meet lots of new friends.

“I really like it here, I'm hoping all the local people will spot the store and come in and see us and try our food,” she said.

Even over the Easter long weekend, Vi won't be able to rest as the couple will be opening the store all weekend.

The store has been a big hit with the locals so far and Vi hopes people like what they try and come back for more.

“Hopefully they will like our food, then come back time and time again,” she said.

Vi's bakery serves a variety of pastries, sandwiches, sushi and cakes.
