Matt Moran: My pet hates, fears and best dad joke

As a fourth-generation farmer, first and foremost Matt Moran is a man of the land.

His first job was working for his dad on the farm, which is still run by his family, on the Central Tablelands of NSW.

Moran was a pioneer of the "paddock to plate" movement, with beef and lamb from the family farm supplied to his restaurants.

Since starting his cooking career 30 years ago, Moran has opened numerous restaurants across the country - including Aria in Brisbane - and starred in TV shows and written cookbooks.

He is back on our screens as a judge on Nine's Family Food Fight, in which eight families go head-to-head in the kitchen to become Australia's best amateur cooks.

Family Food Fight airs Sundays at 7pm and Mondays-Tuesdays at 7.30pm.

HOME

Favourite room in my home? The kitchen.

Most treasured possession? My farm.

Best place ever lived? By the beach in Sydney, nothing better.

Favourite thing in your kitchen? My family, most days. It's the most-lived-in part of the house.

My next challenge is? Opening the new Chophouse in Parramatta (sydney).

I'm addicted to … work.

Best way to chill out? I go for a ride on my Ducati.

What's in your back yard? Barbecue, wood-fired oven, veggie garden, dog.

Favourite thing to cook at home? My roasts are most requested.

Favourite place to holiday? The farm with family.

Pets? Dog, Freddy. Cat, Marvin.

Ingredient you can't live without? The best of the basics: a great quality butter, olive oil, salt and pepper.

How often do you cook at home? Often, every week. It's my favourite place to cook.

Next big purchase? Hmm ... a new restaurant?

STYLE

Typical outfit? Black T-shirt, black jeans. But I'm starting to add more colour.

I never leave the house without? My hat.

Most surprising thing in your wallet? I don't carry cash.

Most sentimental item you own? The farm.

Most-worn item in your wardrobe? Motorcycle boots.

Do you have tattoos? My kids' names are on my biceps. The tree of life on my shoulder. My best mate Vincent Fantauzzo drew it.

The last shop you went into? I had breakfast at Huxtons in Bronte this morning.

If you could steal a celebrity's look, who would it be? Peter Quill (Chris Pratt) in Guardians of the Galaxy.

Describe your style in a word? Uncomplicated.

Who would you want to be for a day? Batman.

Favourite designer? Tom Ford.

PASSIONS

Mantra you live your life by? Do what you love and you'll never work a day in your life.

Favourite hobby? Riding motorcycles.

Last person you spoke to on the phone? My wife.

Guilty pleasure? Chocolate.

Best dad joke? Did you hear about that restaurant on the moon? Great food but no atmosphere.

I can't live without … food, farm and family.

Most surprising thing about me is … I sometimes burn food.

I'd like to learn to … fly a helicopter.

If I could rid the world of one thing it would be … hunger.

Pet hate? People opening the fridge and just staring at what's in there.

I have a fear of … heights.

My hidden talent is … music trivia! You'll want me on your team.

Before I die I must … learn how to fly a helicopter.

When I retire … slowing down isn't my strong suit. I'm not sure I will.

Book that changed your life? Larousse Gastronomique.

When was the last time you cried? The other day when I stubbed my toe.

Most sentimental dish? Moran family lamb. It takes me straight to the farm and dinners with family.

Favourite family tradition? Christmas Eve party.

Favourite quote? Do what you love and you'll never work a day in your life.

What was your first job? Working for Dad on the farm! Then, an apprentice chef.

People I admire? My Dad, Jim. My wife, Sarah.

What inspires you? People with passion and integrity.

Biggest strength? I go all right in a kitchen.

Biggest weakness? Chocolate and wine.

Best advice I ever got? From my dad: work hard, persistence pays off.

Worst advice I ever got? Turn right when I should have turned left.
