Smoked salmon, pea and radish salad inspired by MKR
AFTER watching the first episode of My Kitchen Rules this week with police officers Monique and Sarah cooking salmon, it inspired us to share one of our favourite salmon dishes with you. Our household was excited for the new season to start.
Smoked salmon, pea and radish salad
400g of smoked salmon
2 cups frozen peas, defrosted
1 bunch radish, wedged
1 bunch watercress, picked
1 small bunch of dill, picked
2-3 preserved lemon slices, sliced very thin
1 tub Greek yogurt
1 bunch fresh mint, finely chopped
juice of ½ a lemon
pinch of salt
This salad basically needs building. Simply combine the salad ingredients, except the minted yogurt component, in a bowl.
Arrange on a plate.
Then make the yogurt dressing by mixing together the Greek yogurt, fresh mint, lemon juice and salt.
Dress the entire salad. Serves 4.
